Making Deer Salami – Reviewing the Walton’s 11 lb Stuffer

My family has been making our own deer salami since I was a kid (a long time ago) and stuffing has always been one of those battles we have fought every year. That’s not the case anymore with the Walton’s Inc 11 lb Sausage Stuffer.

We have many types of stuffers over the years from an old cast iron fruit press to those cheap banana style stuffer.  All of them worked, but they had their limitations including using a modern commercial meat grinder. For every stuffer we have tried, the major hurdle has always been snack sticks. It takes a lot of pressure to press the venison that’s been mixed in seasonings into those thin casings. Most stuffers can’t handle that and a meat grinder just turns the meat into mush. A geared down stuffer with a tight seal is what is required for this so this year we decided it was time to upgrade. After checking out multiple brands, I decided to try out the Walton’s Inc 11 lb Sausage Stuffer.

Upon pulling this stuff out of the box and putting it together, we were instantly happy.  Everything is stainless steel including the gears. Operating this stuffer is as easy as can be. The hopper comes on and off without any effort which makes loading the meat easy as well as cleaning. The gearing setup on this is pretty much perfect. It could be a bit lower tho as you see in the videos below, pressing the meat through the small tube for snack stick sizes gets a bit tough. But I can’t complain as it’s still easier than what I’m used to. The high gear is a great option for raising and lowering the plunger. That saves a lot of time as you’ll also see in the videos.

Using the stuffer

This video clip shows stuffing the small snack sticks. An 11 lbs hopper holds a lot of meat and packing that all into small casings make a lot with one pass. I do have to hold the stuffer pretty tight to keep it stable. Next time we will clamp the stuffer base down on the table to help with this.This next video shows you how to change the speeds of the plunger and how easy the hopper comes off. Can’t get much better than this part.

My thoughts..

All and all I can’t complain one bit about the Walton’s Inc 11 lb Sausage Stuffer. It’s been a complete game changer for us and saved a ton of time. With the multiple tube sizes that came with it, we used it for larger salami rolls, making brats and even filling bags with burger. It quickly became a major key tool in all of our processing and investment I’ve been kicking myself in the butt for not making a long time ago.

Now it’s time to smoke up some salami.
